RECIPE: Rhubarb Cheesecake Bars

If you love rhubarb, then these Rhubarb Cheesecake bars are going to be heavenly. If you aren’t a big fan of rhubarb, these bars will change your attitude towards rhubarb. This recipe is from Dionne Zaspel, one of the dental assistants at Personal Care Dentistry. Dionne is adored by the team at PCD for many things, but one of the biggest is her skills in the kitchen. Everyone always loves the dishes she brings to team potlucks in the break room, and if you are lucky enough to have a birthday cake baked by her, you’ll have a memorable celebration.

This Rhubarb Cheesecake is one of Dionne’s favorite recipes. It’s a sure winner for a weekend get-together or to take to a potluck. Enjoy!

 

Rhubarb Cheesecake Bars

Ingredients

Crust

  • 1½ cups flour
  • ½ cup sugar
  • ¾ cup butter

Rhubarb layer

  • 2 cups rhubarb
  • ½ cup sugar
  • 2 tbsp. flour

Cheese filling

  • 2 (8 oz.) packages cream cheese
  • ½ cup sugar
  • 2 eggs
  • 1 tsp. vanilla

Glaze

  • 2/3 cup sour cream
  • 2 tbsp. sugar
  • 1 tsp. vanilla

Directions

  1. Preheat the oven to 375 degrees.
  2. Mix the crust ingredients together, and then form then into a 9×13” pan.
  3. Bake the crust for 10 minutes.
  4. Mix the rhubarb filling layer and add to the hot crust – bake for 15 minutes.
  5. Mix the cream cheese layer and pour over the rhubarb. Bake another 25 minutes.
  6. Mix the glaze and spread over the hot bars.
  7. Cool and refrigerate.
  8. Enjoy!
